Ricotta cheese is supposed to be incredibly simple to make. I'm going to find out this weekend. If this microwave recipe works, I suspect I will never buy ricotta again. And I do hope it works because, with this colder weather, I feel like making some serious comfort food. I'm torn between the calzones from Lidia's Italian-American Kitchen and the Mashed Potato Ravioli from Italian Family Dining by Edward Giobbi. Either way, it's going to be a great dinner.
